Rhubarb Squares

Mister man! This is one of the family’s all-time favourite recipes for June. If you love rhubarb you’re going to need this added to your list of things to make while it’s in season. (I ALWAYS double this for a 9×13!)

Rhubarb Squares

Base:
1 Cup Flour
1/2 Cup Butter
1 Tbsp Sugar
Cut in butter and pat into square baking dish
Bake at 350 for 10 minutes.

Filling:
2 1/2 Cups Rhubarb sliced
2 Tbsp Flour
3 Egg Yolks
1/2 Cup Milk
1 Cup Sugar
1 tsp Vanilla
1/2 Cup Coconut
Mix and pour over base. Bake 45 minutes.

Merigue:
1/2 Cup Sugar
3 Egg Whites
Beat until stiff peaks for and spread on top. Bake another 10 min, until top is nicely browned.
